Domaine Passy le Clou
Domaine Passy le Clou works the limestone-rich soils of Chablis, the northernmost expression of Burgundy's Chardonnay tradition. The winery produces three tiers of unoaked white wine, each defined by terroir and ripeness. The entry-level Petit Chablis offers the region's characteristic mineral austerity. The core Chablis expands the palette with more weight and complexity. The Chablis 1er Cru 'Beauroy' represents the finest designation, drawn from a premier vineyard site that imparts deeper structure and aging potential. All three wines are pure Chardonnay, fermented and aged to preserve the crisp, flinty character that Chablis demands. Wine Enthusiast and Decanter have both assessed the portfolio.
