The house works primarily with Chardonnay and Pinot Noir, the foundational grapes of the appellation, alongside Pinot Blanc and Arbane—a rare Champagne variety that adds textural complexity. The Blanc de Blancs Extra Brut, built from Chardonnay with Pinot Blanc and Arbane, and the Éloquence Blanc de Blancs Extra Brut, a pure Chardonnay expression, both demonstrate the mineral clarity and tension that define the region's finest white wines.
