Castellore operates in Puglia, the sun-soaked heel of Southern Italy, where Mediterranean warmth and ancient limestone soils shape distinctive white wines. The winery focuses on Ribolla Gialla, a crisp, mineral-driven variety native to northeastern Italy but finding new expression in the south's generous climate. Its Specially Selected Ribolla Gialla Spumante Brut—a sparkling interpretation of the same grape—demonstrates the variety's capacity for complexity and refinement. A still Ribolla Gialla rounds out the portfolio, offering the grape's characteristic acidity and stone-fruit character in a dry, food-friendly format.
