Pittacum produces wines from Castilla y León, Spain's vast interior plateau. The winery works with grapes native to the region: Garnacha Tintorera, a dark-skinned variety that yields structured reds; Godello, a white prized for its mineral character and aging potential; and Mencia, which thrives in the cooler microclimates of the northwest. La Prohibición Garnacha Tintorera and La Maragata Godello Blanco de Guarda represent the winery's core offerings, both rated 92 by prestige critics including Wine Enthusiast, Wine Advocate, and Decanter. Val De La Osa, a Mencia-based wine, rounds out the portfolio at 91. These wines reflect the continental climate and granite soils characteristic of their origin, where temperature swings between seasons shape the final expression in the glass.
