Colibri is a Michelin Plate restaurant on a medieval Breton street, its wood-and-stone dining room oriented around an open kitchen. The cooking pushes Brittany's coastal-and-inland logic into adventurous, deliberate pairings: scallops arrive with pig's ears and lemon confit, lamb sweetbread comes in an anchovy and Iranian dried lime butter, and bream is set against cardamom and turnips. At a moderate price point, it’s one of northern Brittany's more interesting value propositions, a focused bistro punching above its category.
