This Roma Norte corner shop and bistro, a project by Mónica Patiño, celebrates the artisanal soul of Mexican gastronomy through a Mediterranean lens. The air is thick with the scent of freshly baked sourdough and roasted sumac, drawing diners to its minimalist, sidewalk-facing tables. Signature tortas feature succulent pork carnitas, confit in their own fat and brightened by the crunch of pickled purple cabbage. The technique is rooted in slow-cooking and fermentation, evident in the house-made jams and cured meats that populate the shelves. A standout texture is found in the lamb moussaka, where layers of charred eggplant and spiced meat are bound by a velvety, nutmeg-scented bechamel. Flavor profiles lean toward the vibrant and herbaceous, utilizing organic produce sourced from local chinampas.
