The signature experience begins with warm lavash, pulled fresh from the oven, its yeasty aroma pairing with a velvety chicken liver pâté or a vibrant tomato salad dressed in unrefined walnut oil. Technical skill is applied to the beef cheeks, which are slow-braised until they achieve a gelatinous, melt-in-the-mouth consistency, served alongside a smooth potato purée. The flavor profile is defined by the judicious use of pomegranate seeds and fresh coriander, providing bursts of acidity and herbal brightness.
