Adrien Dhondt produces Blanc de Blancs Champagnes from three of the Côte des Blancs' most prestigious Grand Cru villages: Mesnil-sur-Oger, Avize, and Oger. Each wine is built entirely from Chardonnay, the region's signature grape, and bottled in the Extra Brut style—bone-dry and mineral-driven. Les Coullemets from Mesnil-sur-Oger and Les Pisseraines from Avize represent the house's highest-rated expressions, showcasing the chalky soils and cool-climate precision that define this terroir. Blaise, from Oger, completes the trilogy. These are expressions of place rather than dosage, where Chardonnay's natural acidity and stone-fruit character emerge unadorned.
