Alice et Olivier de Moor produces Chardonnay and Sauvignon Blanc from Burgundy's northernmost reaches. The winery's flagship, L'Humeur du Temps Chablis, expresses the mineral precision and tension characteristic of unoaked Chardonnay from this limestone-rich terroir. Clardy et Rosette, also a Chablis Chardonnay, follows a similar path of restraint and definition.
