The winery draws on indigenous Sicilian varieties—Grillo, Catarratto Bianco, and Perricone—each rooted in the island's volcanic soils and Mediterranean climate. The Passito Grillo expresses the aromatic potential of its grape through a concentrated, sweet style. Donna Angelica Bianco, built from Catarratto Bianco, captures the crisp minerality the variety is capable of delivering.
