Bedouet Vigneron works with Melon de Bourgogne in Muscadet-Sevre et Maine, the Loire Valley's principal white wine region. The winery's Expression du Pallet Vieilles Vignes, drawn from older vines, represents the upper range of its output and has been assessed by Wine Enthusiast, Wine Spectator, and Decanter. A second Expression du Pallet bottling, labeled for the appellation itself, offers a complementary expression of the same variety. Cogito rounds out the portfolio. Melon de Bourgogne—the sole permitted grape in Muscadet—yields wines of mineral precision and bracing acidity, with the region's slate and schist soils imparting distinctive salinity. Bedouet's focus on this single varietal reflects the classical discipline of the appellation.
