Château Hyot produces wines from Castillon–Côtes de Bordeaux, a right-bank appellation defined by clay and limestone soils that favor Merlot and Cabernet Franc. The estate's core range reflects this terroir through three distinct expressions. The Réserve Castillon–Côtes de Bordeaux, a blend of Merlot, Cabernet Sauvignon, and Cabernet Franc, represents the upper tier of the portfolio. The Cuvée Gorry Castillon Côtes de Bordeaux, built on Cabernet Franc, Merlot, and Cabernet Sauvignon, offers a secondary expression. The standard Castillon–Côtes de Bordeaux, anchored by Cabernet Sauvignon with Merlot and Cabernet Franc, rounds out the range. All three have been assessed by Wine Spectator and Wine Enthusiast. Castillon–Côtes de Bordeaux wines typically show the structure and dark fruit character of the region's Cabernet-driven blends, tempered by the softness Merlot brings to the right bank.
