Château Hyot produces wines from Castillon–Côtes de Bordeaux, a right-bank appellation defined by clay and limestone soils that favor Merlot and Cabernet Franc. The Réserve Castillon–Côtes de Bordeaux, a blend of Merlot, Cabernet Sauvignon, and Cabernet Franc, represents the upper tier of the portfolio. The Cuvée Gorry Castillon Côtes de Bordeaux, built on Cabernet Franc, Merlot, and Cabernet Sauvignon, offers a secondary expression.
