Château Pajzos produces wines from Tokaj, Hungary's renowned region for noble-rot desserts. The winery works primarily with Furmint and Hárslevelű, the indigenous grapes that define Tokaj's character—varieties prized for their ability to concentrate sugars and acidity under botrytis infection. Esszencia, made from Furmint, represents the apex of this tradition: a wine of extraordinary richness and complexity. The Tokaji Aszú 6 Puttonyos, a blend of Hárslevelű and Furmint, and the Ladiva Tokaji Aszú 5 Puttonyos, crafted from Furmint alone, demonstrate the winery's command of Tokaj's layered, honeyed style.
