The domaine works with the white varieties of the region—Vermentino, Grenache Blanc, Macabeo, and Roussanne—in Les Canadells Collioure, a wine that balances aromatic complexity with the salinity characteristic of coastal Roussillon. In fortified Banyuls, the traditional sweet wine of the region, the domaine explores both immediate release and extended aging: Rimage Mise Tardive Banyuls captures Grenache and Carignan at a moment of ripe concentration, while Reserva Banyuls, built from the same varieties, reflects the deeper oxidative development that age brings to this category.
