The house's portfolio centers on Brut Nature expressions—wines of minimal dosage that showcase the purity of fruit and minerality characteristic of Champagne's chalk soils. Clos Sainte Sophie Blanc de Blancs Brut Nature, a pure Chardonnay bottling, stands as the flagship release. Autour de Minuit Brut Nature Blanc de Blancs Grande Côte, also Chardonnay-based, and La Cave des Papilles Extra Brut, a Pinot Noir and Chardonnay blend, round out the core range. These wines have been assessed by Wine Advocate, Wine Spectator, and Decanter. The house's commitment to low-intervention winemaking—evident in the Brut Nature designation—allows the mineral and floral character of Champagne's vineyards to emerge with clarity and precision.
