Jérôme Prévost produces Champagne from a singular focus: the chalky soils and cool climate of the region, expressed through carefully selected parcels. The house works primarily with Pinot Meunier and Chardonnay, grapes that thrive in Champagne's demanding terroir. La Closerie, the flagship line, encompasses three distinct expressions: an Extra Brut rosé built on Pinot Meunier's red-fruit character; a Grand Cru blend of Chardonnay and Pinot Noir with mineral precision; and a Brut Nature rosé that showcases Pinot Meunier in its most austere form. Each wine reflects the house's commitment to minimal intervention and extended aging on the lees. Wine Advocate and Decanter have rated these cuvées, recognizing their structure and complexity. The resulting Champagnes are dry, nuanced, and built for the table rather than the aperitif.
