La Toledana
La Toledana produces Cortese-based whites from Gavi, the limestone-rich appellation in Piemonte's southeastern corner. The region's mineral soils and continental climate yield wines of precision and structure—hallmarks of serious Gavi production. The winery's portfolio centers on three expressions of Cortese: the entry-level Gavi, the mid-range Castello Toledana Gavi, and the late-harvest Raccolto Tardivo Gavi, which captures riper fruit and fuller body. Cortese, Gavi's sole permitted grape, is naturally high in acidity and low in alcohol, qualities that define the region's food-friendly character.
