Lallier produces Champagne from Aÿ, a Grand Cru village in the Montagne de Reims known for Pinot Noir. The house works with both Chardonnay and Pinot Noir, emphasizing the latter across its range. The Brut Champagne Grand Cru 'Aÿ' blends Chardonnay and Pinot Noir into a wine rated 92.3 by prestige critics including Wine Enthusiast, Wine Spectator, Wine Advocate, and Decanter. Two Pinot Noir–based expressions follow: the Sélection Parcellaire Les Sous Blanc de Noir, a blanc de noir cuvée, and the Zéro Dosage Brut Nature, both rated 91.0. The latter reflects a drier house style, minimal dosage allowing the fruit and terroir of Aÿ to define the wine. Lallier's focus on single-village fruit and restrained winemaking positions it within Champagne's tradition of grower houses.
