Le Brun Servenay produces champagne from Avize, a Grand Cru village in Champagne known for chalky soils that impart mineral precision to Chardonnay-based wines. The house focuses on extra brut expressions that emphasize freshness and restraint. The Vieilles Vignes Extra Brut Champagne Grand Cru 'Avize' is built entirely from Chardonnay, while the Exhilarante Vieilles Vignes Extra-Brut blends Pinot Noir, Pinot Meunier, and Chardonnay for added complexity. Both wines have been assessed by Wine Spectator and Wine Advocate. A non-vintage Chardonnay champagne rounds out the core range.
