Ondine produces white wines from Darling, a cool-climate pocket of South Africa's Coastal Region in the Western Cape. The winery focuses on three flagship expressions: Chardonnay, Sauvignon Blanc, and Chenin Blanc. Each reflects the region's maritime influence and mineral-driven terroir. The Chardonnay earned an 87 rating from Wine Spectator, while both the Sauvignon Blanc and Chenin Blanc scored 86. Darling's Atlantic-facing slopes and afternoon breezes create conditions suited to aromatic white varieties and crisp acidity—hallmarks of the region's style.
