Paoletti produces Cabernet Sauvignon and Bordeaux blends from Calistoga, the northernmost appellation of Napa Valley. The region's volcanic soils and warm days create conditions suited to ripe, structured reds. The winery's flagship Non Plus Ultra Red Blend—a composition of Cabernet Sauvignon, Merlot, Cabernet Franc, and Malbec—has been assessed by Wine Enthusiast and Wine Advocate. The Cabernet Sauvignon and Bella Novello Cabernet Sauvignon round out the core lineup. Calistoga's elevation and diurnal temperature swings allow for phenolic ripeness balanced by acidity, a signature of the appellation's best expressions.
