Paul Berthelot produces Champagne from the region's Premier Cru vineyards. The house works with the classic varieties of the appellation: Chardonnay, Pinot Noir, and Pinot Meunier, each contributing structure and complexity to the final blend. The Blanc de Blancs Brut Premier Cru, made from Spätburgunder, and the Extra Brut Premier Cru, a Pinot Noir and Chardonnay blend, both earned 91-point ratings from prestige critics. The Réserve Champagne, a traditional three-varietal blend, received a 90-point rating. Wine Enthusiast and Wine Spectator have assessed the winery's output. These are dry, focused expressions rooted in the chalky soils and cool climate that define Champagne's character.
