The winery's Amarone della Valpolicella—a blend of Corvina and Rondinella—has been assessed by Wine Spectator, Wine Enthusiast, Wine Advocate, and Decanter. The Rosso Veronese, built from Corvina, Moradella, and Rondinella, follows a similar critical trajectory. A third expression, Valbrusà Valpolicella, rounds the portfolio with Molinara, Rondinella, and Corvina in the blend. These wines reflect the Valpolicella tradition: concentrated, structured reds from the region's signature grapes, where the appassimento method—drying grapes before fermentation—concentrates flavor and alcohol. Sartori's range spans the spectrum of Veronese red winemaking, from the austere complexity of Amarone to the more approachable character of Valpolicella.
