Provolo

Provolo produces wines from Veneto in Northern Italy, drawing on the region's signature varieties and traditional methods. The winery's Amarone della Valpolicella, crafted from Oseleta, Corvina, and Rondinella, represents the appassimento style—where grapes are dried before fermentation to concentrate sugars and tannins. A second Amarone expression, Tenuta Ca'Nove, blends Corvina, Molinara, and Rondinella into a structured, age-worthy wine. The Valpolicella Ripasso Superiore, made from Rondinella, Corvina, and Molinara, sits between fresh Valpolicella and full Amarone in weight and complexity, passing over the skins of Amarone production to gain depth. Wine Spectator and Wine Enthusiast have rated Provolo's releases, with the flagship Amarone earning particular recognition among prestige critics.
