The house crafts a Brut Champagne from Chardonnay and Pinot Noir, a Les Crots Rosé de Saignée from Pinot Noir, and a Blanc de Noirs from Pinot Noir alone. Decanter has rated these releases, with the Brut and Rosé de Saignée each scoring 94 points and the Blanc de Noirs at 93 points. The focus on Pinot Noir—particularly in the single-varietal expression—reflects a commitment to the darker fruit character and structure that this grape brings to Champagne. The rosé, made via saignée, draws color and texture from extended skin contact before fermentation.
