The house works with Vermentino, a white variety that thrives in the region's warm climate, yielding wines of aromatic intensity and mineral structure. Vendemmia Tardiva Vermentino, made from late-harvest fruit, represents the winery's approach to extracting concentration and complexity from this grape. On the red side, Carpoli Toscana blends Cabernet Franc, Petit Verdot, and Cabernet Sauvignon—a composition that draws on the Tuscan tradition of marrying international varieties with local sensibility. The winery's portfolio also includes a standard Toscana Vermentino, offering a more approachable expression of the white.
