St Mary's is located in the Limestone Coast region of South Australia, where cool maritime influences and distinctive soil composition shape the character of the wines. The winery produces Shiraz with notable structure and depth, alongside Carillon, a Cabernet Sauvignon–led blend with Shiraz and Cabernet Franc that reflects the region's capacity for elegant, age-worthy reds. Bells and Whistles, a four-varietal blend anchored by Petit Verdot and Cabernet Sauvignon with Cabernet Franc and Shiraz, rounds out the portfolio.
