The 5OS Project operates in McLaren Vale, the warm, maritime-influenced region of South Australia's Fleurieu Peninsula. The winery's portfolio centers on Shiraz, the signature variety of McLaren Vale, here paired with Viognier in a blend that marries the dark fruit and spice of Syrah with the floral, stone-fruit character of the white grape. Beyond that flagship, the winery explores less common Mediterranean varieties: Montepulciano, the Italian red with earthy tannin structure, and a white blend of Riesling, Sauvignon Blanc, and Chardonnay that balances aromatic freshness with textural depth. Wine Spectator and Wine Enthusiast have rated these releases, with the Shiraz–Viognier and Montepulciano earning particular recognition among the portfolio.
