The winery's Amarone offerings—Ca'de' Rocchi Amarone della Valpolicella Classico and Tenuta Valleselle Aureum Acinum Amarone della Valpolicella—showcase the appassimento method, where dried grapes yield the region's signature dense, structured reds.
