Wachholder operates in Südburgenland, Austria's southernmost wine region, where continental climate and iron-rich volcanic soils create conditions for distinctive red wines. The winery focuses on Blaufränkisch, the region's signature dark-skinned variety, which thrives in these conditions and develops structure and mineral character. Eisenberg, the winery's flagship, draws its name from the iron-oxide-rich terroir that defines the appellation. Saybritz Blaufränkisch represents a second expression of the variety from the same region. Both wines have been assessed by Falstaff, the influential Austrian critic. Südburgenland's cool nights and warm days allow Blaufränkisch to achieve full ripeness while retaining acidity and tannin definition—qualities evident in Wachholder's portfolio.
