Zýmē operates in Veneto, the northeastern Italian region celebrated for its distinctive dried-grape wines. The winery's portfolio centers on the classic varieties of Valpolicella and surrounding territories: Corvina, Corvinone, Rondinella, and Oseleta among them. La Mattonara Amarone della Valpolicella Classico Riserva, built from Oseleta, Corvinone, Corvina, Rondinella, and Croatina, represents the house's interpretation of the region's appassimento method—grapes dried to concentrate sugars and tannins before fermentation. Al Mio Maestro Amandorlato Recioto della Valpolicella Classico follows the same dried-grape tradition, yielding a sweeter expression. Harlequin, a field blend spanning red and white varieties across the Italian northeast, demonstrates the winery's broader regional reach.
