A tasting journey through the North Fork terroir begins with the yeasty, floral aroma of an unfiltered pét-nat at One Kourt Studio. This boutique space, helmed by alumni of Blue Hill at Stone Barns, bridges the gap between a refined larder and a progressive wine laboratory. Guests navigate a sequence of small, intentional bites, starting with the briny snap of local Little Ram oysters, enhanced by a sharp, fermented chili mignonette. The progression continues with hand-sliced ribbons of prosciutto, their silky texture providing a rich counterpoint to the mineral depth of a Sierra de Gredos Grenache. Central to the offering are premium conservas—mackerel or sardines preserved in high-quality oils—served alongside charred sourdough and a dollop of cultured, sea-salted butter. Each pairing is a study in balance, where the chalky tannins of a skin-contact white cut through the fat of artisanal cheeses.
