Billecart-Salmon produces champagne from the chalky soils and cool climate of France's Champagne region. The house works with Pinot Noir and Chardonnay, the region's foundational varieties, crafting wines that balance precision with depth. Clos Saint-Hilaire Brut, a Pinot Noir–based champagne, and Cuvée Louis Blanc de Blancs, made entirely from Chardonnay, represent distinct expressions of terroir and varietal character. The Grande Cuvée Brut blends both grapes, a classical Champagne approach. These wines have been assessed by Decanter, Wine Advocate, Wine Spectator, and Wine Enthusiast.
