Cantina di Negrar operates in Valpolicella, the Veneto region of Northern Italy renowned for its distinctive dried-grape wines. The winery produces three core expressions: a Valpolicella built from Rondinella, Corvina, and Corvinone; an Amarone della Valpolicella Classico from Rondinella, Corvina, and Corvinone; and a Recioto della Valpolicella Classico that adds Sangiovese to the traditional blend. The Recioto, made from partially dried grapes, achieves a concentrated sweetness and structure that has drawn attention from Wine Enthusiast, Decanter, and Wine Spectator. The Amarone—the region's signature dried-grape red, full-bodied and complex—represents the appassimento method at scale. The entry-level Valpolicella offers the same core varieties in a fresher, more immediate form.
