The house works primarily with Pinot Blanc, Chardonnay, and Pinot Noir—grapes that thrive in this cool climate and lend the wines their characteristic precision and depth. The Pinot Blanc Extra Brut showcases the mineral character of its single varietal, while the Millésimé Brut blends Chardonnay and Pinot Noir for structure and complexity.
