Colio produces wines in Ontario, Canada's premier cool-climate region. The winery focuses on icewine, a category defined by grapes harvested after frost concentrates their sugars. Two flagship expressions anchor the portfolio: Icewine Vidal, made from the Vidal grape, and CEV Icewine Riesling, crafted from Riesling. Both have been assessed by Wine Spectator and Wine Enthusiast. Icewine Vidal earned an average prestige rating of 89, while CEV Icewine Riesling scored 81. Ontario's continental climate and proximity to the Great Lakes create conditions suited to late-harvest viticulture, where frozen grapes yield concentrated, complex dessert wines marked by natural acidity and intense fruit character.
