Domaine George works the chalky soils of Chablis, where Chardonnay thrives in the region's cool continental climate. The winery produces two core expressions: a Chablis that captures the mineral precision and citrus tension characteristic of the appellation, and a Chablis Vieilles Vignes sourced from older vines that deepen the wine's complexity and structure. Both wines have drawn assessment from Wine Enthusiast and Decanter. The Chablis achieves particular focus, its lean acidity and flinty character reflecting the terroir's Kimmeridgian limestone. The Vieilles Vignes offers a more layered interpretation, where age and vine maturity add textural weight while maintaining the region's signature salinity and restraint.
