The winery's portfolio centers on Amarone della Valpolicella and Recioto di Soave—both expressions of the appassimento method, where grapes are dried before fermentation to concentrate sugars and complexity. Scajari Amarone della Valpolicella Riserva blends Corvinone, Oseleta, Corvina, and Rondinella into a structured wine of depth and aging potential. Monte Serea Amarone della Valpolicella follows a similar varietal composition, offering another take on the appellation's dark fruit and spice character. Renobilis Recioto di Soave shifts to Garganega, the white grape of the Soave zone, crafted in the sweet style that defines the Recioto category.
