The house works with the classic varieties of the appellation: Chardonnay for its Blanc de Blancs Brut, and Pinot Noir with Pinot Meunier for its Blanc de Noirs Brut. The Blanc de Blancs, made entirely from Chardonnay, expresses the mineral precision and citrus character typical of chalk-soil terroirs. The Blanc de Noirs draws on the darker fruit and structure that Pinot Noir and Pinot Meunier bring to Champagne's traditional blends. Decanter has rated both cuvées, with the Blanc de Blancs earning particular recognition. Each represents the house's approach to the region's exacting standards for méthode champenoise.
