San Rustico produces wines from Valpolicella, the historic red wine region of Veneto in Northern Italy. The winery specializes in the region's traditional dried-grape wines: Amarone della Valpolicella Classico and Recioto della Valpolicella Classico. Both styles emerge from the appassimento method, in which Corvina, Rondinella, and Molinara grapes are dried before fermentation, concentrating their structure and depth. San Rustico's Amarone della Valpolicella Classico, built on Rondinella and Corvina, and the Gaso Amarone della Valpolicella Classico, a blend of Corvinone, Rondinella, and Corvina, have been rated by Falstaff, Wine Advocate, Wine Spectator, Wine Enthusiast, and Decanter. The Recioto della Valpolicella Classico—a sweet expression of the same fruit—rounds the portfolio.
