Santa Sofia produces wines from Valpolicella, the storied red wine region of Veneto in northern Italy. The winery's portfolio centers on the region's signature expressions: Amarone della Valpolicella Classico, a dried-grape wine built from Corvinone, Corvina, and Rondinella; and Recioto della Valpolicella Classico, a sweet counterpart made from Corvina, Rondinella, and Molinara. Both represent the appassimento method—the partial drying of grapes before fermentation—that defines Valpolicella's character. Santa Sofia also produces Cabernet Sauvignon Predaia, extending beyond the region's traditional varieties. Wine Spectator has rated the winery's releases, with the Amarone, Recioto, and Cabernet Sauvignon each earning marks in the mid-to-high 80s.
