Stéphane Aviron produces Gamay from three of Beaujolais's most prestigious crus. The winery's Vieilles Vignes bottlings—Morgon Côte du Py, Moulin à Vent, and Julienas—draw from mature vines across these distinctive terroirs. Morgon's volcanic soils and Moulin à Vent's granite slopes each impart their own mineral signature to the Gamay grape, while Julienas adds another expression from its own geological character.
