Stéphane Aviron produces Gamay from three of Beaujolais's most prestigious crus. The winery's Vieilles Vignes bottlings—Morgon Côte du Py, Moulin à Vent, and Julienas—draw from mature vines across these distinctive terroirs. Morgon's volcanic soils and Moulin à Vent's granite slopes each impart their own mineral signature to the Gamay grape, while Julienas adds another expression from its own geological character. These wines have been assessed by Wine Advocate, Wine Enthusiast, and Wine Spectator. The Morgon Côte du Py and Moulin à Vent rank highest among the portfolio, reflecting the intensity and structure these old-vine sites can yield. Beaujolais Gamay, when sourced from mature vines in these crus, develops the depth and complexity that elevates it beyond the region's lighter, fruit-forward reputation.
