Viviani produces wines from Valpolicella, the Veneto region renowned for its distinctive dried-grape method. The winery's portfolio centers on Amarone della Valpolicella Classico, a wine built from Corvina, Molinara, and Rondinella grapes—varieties that define the appellation's character. Casa dei Bepi Amarone della Valpolicella Classico, their flagship expression, draws from the same trio of grapes and represents the house's core offering. The winery also makes Recioto della Valpolicella Classico, a sweeter iteration of the same fruit. These wines have been assessed by Wine Enthusiast, Wine Spectator, Wine Advocate, and Decanter. Valpolicella's appassimento tradition—drying grapes before fermentation—concentrates sugars and tannins, yielding wines of depth and structure. Viviani's work reflects this regional methodology.
