At Huet, the Sweetness on the Label Is a Weather Report

Three Vouvray vineyards, and the vintage decides what each one becomes

Vouvray prints a sweetness level on every label, and at Domaine Huet that word functions as a weather report rather than a grade. Sec, demi-sec, moelleux: the estate settles which one a parcel becomes after the fruit is in, not when the season starts. Most growers commit earlier and get stranded when the year refuses to cooperate. Huet changes the name on the bottle instead.

Three vineyards do all of the work. Le Haut-Lieu, on clay over limestone, gives the roundest wines. Le Mont sits higher and stonier and stays tense for decades. Clos du Bourg, walled in tuffeau above the village, splits the difference and takes the longest to come round. Any of them can be bottled dry, off-dry or sweet from the same harvest, which makes the range a grid rather than a ladder.

Noël Pinguet, Gaston Huet's son-in-law, moved the estate to biodynamics after a trial in the 1988 vintage convinced him, and certification followed in 1993. Coming from a cellar with that much to lose, it looked reckless. The reasoning was practical. Chenin Blanc ripens unevenly and rots in two directions, nobly if the autumn behaves and greyly if it does not, so farming that keeps canopies open and yields honest is what turns the gap between moelleux and vinegar into something a winemaker can actually steer.

Critics have made the estate's case without meaning to. The dry Clos du Bourg, the off-dry Le Mont and the sweet Clos du Bourg all peak around 97 points in Femente's critic data. Sweetness predicts nothing about quality here. The parcel and the year predict everything. Anyone treating moelleux as the serious bottle and sec as the weekday pour is reading a hierarchy that Huet never built.

So the buying question inverts. Choose the vintage, then the parcel, then accept whatever sweetness that pairing produced; 2020 leads the recent years on critic average across the whole range. Cuvée Constance, the botrytis selection drawn from the best barrels, exists only in seasons generous enough to allow it, and it has been skipped more often than made. Even the flagship answers to the weather.
