The Cork Argument Was Settled by a Plastic Disc

Closure choice turned out to be an oxygen specification, not a philosophy

Cork against screwcap was never really a fight about cork or screwcaps. It was a fight about how much oxygen a bottle should receive after it leaves the winery, and once the trade worked that out, the closure stopped being a matter of principle and turned into a specification. Both camps now adjust the same variable.

Cork taint started it. Trichloroanisole forms when chlorine meets mould in cork bark, and it makes wine smell of wet cardboard at concentrations measured in parts per trillion. Through the eighties and nineties, surveys put the incidence somewhere between three and ten percent of bottles. At the bad end of that range a restaurant opening a case could expect to pour something musty out of it, and Australia and New Zealand responded by abandoning cork almost wholesale.

Then the complaint flipped. Wines under screwcap began turning up smelling of struck match, or boiled cabbage, or worse, which is reduction: volatile sulfur compounds that a small amount of oxygen would have burned off. Producers loyal to cork said the seal was too tight. Producers loyal to screwcap said the wine had always been like that and cork had simply been hiding it. Both were partly right, and neither position told a winemaker what to do next.

The liner resolved it. Inside every screwcap is a disc, and that disc is what governs how much oxygen crosses into the bottle. Manufacturers now supply it in grades: a plain plastic version that admits a measurable trickle, and a tin-faced version rated for roughly twice the ageing life because it admits almost nothing. A winemaker picks according to how reductive the wine runs. European producers have tended toward the leakier one for exactly that reason, which is a sentence nobody could have written during the shouting years.

The data took the heat out of the rest. A large Australian trial rejected cork-stoppered bottles at 4.7 percent against 1.6 percent for screwcap, and when reduction faults were counted on their own, they landed at 0.81 percent under both closures. Reduction was never a screwcap problem. It was a winemaking problem that screwcaps declined to conceal.

So the question worth asking at the shelf is not which closure a bottle carries. It is whether anyone chose it. A careful producer using screwcap has matched a liner to a wine it understands; a careful producer using cork has accepted a small taint risk to buy oxygen it actually wants. The closure that should give you pause is the one picked out of habit, because habit has no idea what is in the bottle.
