The winery's Icon, an Assyrtiko, and Afoura, also Assyrtiko, capture the region's signature salinity and tension—wines of restraint and precision. St. Nikolas, a blend of Mandilaria and Mavrotragano, draws on the darker, earthier indigenous varieties that anchor Santorini's red tradition.
