Olivares produces wines from Jumilla, a region in Murcia where Monastrell thrives in the continental climate and limestone soils. The winery's portfolio centers on this local variety alongside Grenache and Shiraz, grapes that find expression in the region's intense sunlight and temperature swings. Dulce Monastrell, a sweet wine made from Mourvedre, stands as a flagship expression. Umbria de la Hoya, built on Monastrell, and Tinto, a blend of Grenache, Shiraz, and Monastrell, round out the core range.
