Open a bottle from anywhere in Europe and the fruit came off a European vine that was surgically joined to an American one before it ever went in the ground. Growers call it grafting and treat it as ordinary vineyard practice, which it now is. It began as an emergency measure against an insect nobody could kill, and the insect is still there.
Phylloxera arrived on American cuttings shipped across the Atlantic in the middle of the nineteenth century, and was first recorded in France in 1863. It feeds on roots. European vines had no defence against it and died within a few seasons, and France lost roughly two-thirds of its vineyard before the spread slowed. Every chemical remedy failed. What finally worked was surrender: take the fruiting wood off the European vine, splice it onto the roots of American species that had evolved alongside the louse and could shrug it off, and accept that the root system underneath every future vineyard would be foreign.
Santorini
That compromise now covers something like 85 percent of the world's vineyard area. Because the choice of rootstock is unavoidable, it has quietly turned into a discipline of its own. Growers select roots for how much vigour they push into the canopy, how deep they hunt for water in a dry summer, and how well they cope with chalky soil that would otherwise starve the vine of iron. A decision forced by a pest is now made for reasons that have nothing to do with pests at all.
A few places never had to make it. Phylloxera cannot build stable galleries in loose sand, so vines rooted in it survive untouched, which is why Santorini still farms its own-rooted Assyrtiko in volcanic grit and why the sand-planted vineyards at Colares outside Lisbon outlived the blight entirely. Chile escaped by geography, walled off by the Andes, the Pacific and the Atacama, and holds more ungrafted vinifera than anywhere else on earth. Femente lists close to 2,450 Chilean wineries against five in Colares, which is roughly the shape of the surviving map.
Bottles from those pockets get sold as a taste of the world before the blight, and it is worth being sceptical about that. Own-rooted vines also tend to be older, farmed differently and planted in unusual ground, so there is no clean way to isolate the roots as the cause of anything in the glass. The more interesting point is the one nobody advertises. Every conventional vineyard on earth is a piece of grafted engineering, maintained in permanent standoff with something still alive in the soil beneath it.
