Santo Wines produces white wines from Santorini, the volcanic island in the Cyclades. The winery works with the indigenous grapes of the region: Assyrtiko, Athiri, and Aidani. Assyrtiko, the flagship variety, appears in three of the winery's top expressions—Irini, Santorini Assyrtiko Grande Reserve, and Santorini Nykteri Reserve, a blend that also incorporates Athiri and Aidani. These wines have been assessed by Decanter, Wine Advocate, Wine Spectator, and Wine Enthusiast. Santorini's volcanic terroir and mineral-rich soils shape the character of these whites, which tend toward crisp acidity and saline minerality. The winery's focus on single-varietal and blended expressions from the island's traditional grapes reflects the distinctive conditions of the Aegean.
